I know, I know. Cheesy name.
Silly easy to make, use Cheasy Sauce to top steamed veggies, potatoes, rice or pasta.
This recipe makes a generous amount (~ 4 cups) so freeze leftovers or make into a soup by simply adding more water or vegetable stock and additional seasoning if desired.
Prepare your mise en place.
Put all ingredients except the miso paste, nutritional yeast + S&P into a medium-sized pot.
Bring to a boil, then reduce to a simmer and cover, cooking until carrots are very tender (~15 min.) Stir every so often to prevent sticking.
Remove cooked mixture from heat, add the miso and yeast. Pour into blender to purée. (Or use immersion blender) Blend until creamy smooth, adding water as desired to make a thinner sauce. Add S&P to taste.
Silly easy sauce. Low in fat, high in taste and nutrition. For those who like to experiment, this is an excellent base recipe awaiting your personal touches.
