Wild Rice Tex Mex Salad
Fresh cilantro and hot sauce provide a super-powered flavour kick to this oh-so-easy-to-make salad. It’s a meal in a bowl. Enjoy it in a wrap using a whole wheat, soft tortilla shell.
Ingredients
- 1 large avocado, medium dice
- 1 large tomato, medium dice
- 1/2 cup red onion, medium dice
- 1/2 English cucumber, seeded and diced
- 1/2 cup cilantro, chopped including stems
- 2 cups cooked wild rice
- 1 lime, juice only
- 1 tsp hot sauce, use your favourite and adjust to your 'heat' preference
- sea salt + cracked pepper to taste
Instructions

Prepare your mise en place.
Put all your vegetables + rice into a large salad bowl.
Add lime juice, hot sauce, sea salt and pepper.
Stir gently, but throughly, to combine.
Makes 2 generous servings or 4 starters.

This recipe is uber simple and can be adjusted to incorporate different vegetables, grains/rices, and many more seasonings such as cumin or chili powder. Have some fun with it.
