Bean + Barley Cassoulet

A surprising combination of ingredients ooze umami to make this a winner for dinner. Warm and satisfying, it has hearty and beefy flavour without the meat. Serve along side oven-roasted carrots and parsnips and / or a fresh, bright green salad. It’s quite delicious leftover plus it freezes well (up to three months). It’s a cool weather winner.

Cauliflower Soup for Breakfast?

This cauliflower soup is / was so good, I couldn’t wait for lunch. Here is an estimate of how it came together: 1 medium head of cauliflower, rough chop 3 cloves garlic, smashed 1 small onion, chopped 1/2 cup white beans, pre-cooked, navy beans or similar ~ 1/3 cup oatmeal 1 bay leaf (remove before blending) 1 kaffir lime leaf* (remove before blending) ~ 1/4…

Almond Milk Sour Cream

I came across this recipe from a Danish blogger http://plantepusherne.dk/almond-milk-sour-cream-vegan/ while searching for some options for creamy sauces. I was so impressed with the taste and texture, I tested it again and results were equally fantastic with a few tweaks. My version – Canadianized – is as follows.   Silky smooth, creamy delicious homemade sour cream. When you are looking for that…

Guacamole Makes Me Oh So Happy

There is something about the creamy butteriness of guacamole that really feels decadent. I use it all the time, on just about everything. David and I would make Mexican food together. David would make his Cutting Board Guacamole and salsa while I typically prepared the remaining items such as the beans, rice and tomato base and the lime / toasted cumin seed…

Cheasy Sauce

While rich-looking, this sauce is whole food, plant-based, high in flavour and super low in fat. Use as a gravy / sauce on mashed potatoes, rice, mushrooms, steamed veggies, etc. I know, I know. Cheesy name. Silly easy to make, use Cheasy Sauce to top steamed veggies, potatoes, rice or pasta. This recipe makes a generous amount (~ 4 cups) so freeze leftovers or make…

Roasted Brussels Sprouts with Cranberries + Pecans

This is a beautiful combination for winter eating. It’s also an elegant dish, in its simplicity and in flavour. This recipe is shown here with the Oh Peas Cheasy Sauce and over-baked potatoes (russet potatoes baked until the skins become chewy). Oven-roasted deliciousness, perfect for winter, perfect for sharing – or not.

Smoked Tofu + Black Rice Noodle Wraps

Fresh, crunchy vegetables with black rice noodles make for a beautiful lunch. Cilantro and Italian parsley add a fresh herbiness. The key to elevating your wraps is to dress the noodles beforehand. This adds another layer of flavour whether you use a dipping sauce or not. Enjoy with Daring Deb’s Peanut Sauce.

Daring Deb’s Peanut Sauce

A tasty condiment / dip demonstrating delicate flavour development with the minimum amount of ingredients. Try not to double-dip.   Deb H. created this recipe from scratch as part of a flavour-building exercise during her Oh Peas 3day Reset. It’s a mellow, well-balanced and flavourful sauce that’s perfect not only with rice wraps, it’s an up-leveller for brown rice and steamed vegetables.
