Cheasy Sauce

While rich-looking, this sauce is whole food, plant-based, high in flavour and super low in fat. Use as a gravy / sauce on mashed potatoes, rice, mushrooms, steamed veggies, etc.

Cheasy Sauce

I know, I know. Cheesy name. 

Silly easy to make, use Cheasy Sauce to top steamed veggies, potatoes, rice or pasta.

This recipe makes a generous amount (~ 4 cups) so freeze leftovers or make into a soup by simply adding more water or vegetable stock and additional seasoning if desired.

Ingredients

  • 2 cups carrots
  • 1 cup onion, chopped
  • 2 cloves garlic, rough chop
  • 1/3 cup rolled oats
  • 1/4 cup tomato paste
  • 3 tsp rosemary leaves, fresh
  • 1 tsp Worcestershire Sauce, Vegan
  • 3 cups water
  • 1/4 cup miso paste
  • 1/4 cup nutritional yeast
  • sea salt + cracked pepper to taste

Instructions

  1. Prepare your mise en place. 

  2. Put all ingredients except the miso paste, nutritional yeast + S&P into a medium-sized pot. 

  3. Bring to a boil, then reduce to a simmer and cover, cooking until carrots are very tender (~15 min.) Stir every so often to prevent sticking.

  4. Remove cooked mixture from heat, add the miso and yeast. Pour into blender to purée. (Or use immersion blender) Blend until creamy smooth, adding water as desired to make a thinner sauce. Add S&P to taste.
